Piloncillo, a traditional Colombian sweetener, is dried cane sugar juice. It comes as a solid block, but can be grated into granulated sugar. Piloncillo has a similar flavor to brown sugar, but it is not quite as sweet. It is commonly used in both sweet and savory dishes.
