Process

Processing dried fruits varies depending on the fruit but generally fruits are washed numerous times prior to being dried. Fresh fruits such as the Golden Berries, Mango, Pineapple, Coconut, Ptiaya and Papaya are peeled before being oven dried. Once the fresh fruits are peeled, they are sliced uniformly (except for Goldenberries) to allow for a consistent drying time. Golden Berry / Physalis , for example are peeled from the husk, but kept whole during the drying process. Fruits are then placed on drying racks where they remain throughout the dry oven process.
