Process

Cacao Beans
Whether it is planting, harvesting, or fermenting, every part of Cacao farming is best done by hand. Cacao pods are removed from the trees individually by hand because of the fact that not all ripen at the same time. After the pods are split open by hand, the beans are scooped out, fermented and dried in the two-step curing process.

Quinoa Grains
Quinoa Grains from the salt flat regions are covered with a layer of saponin that needs to be removed prior to consumption. Processed by a machine, quinoa grains are roasted and toasted in order to loosen the saponin. Since the manual process of removing a certain amount of saponin would normally take 6 hours, the machine is able to process the same amount of quantity in 7 minutes. Similarly, the machine is better able to maintain the ring of the grain where the protein and the amino acids are concentrated.

Maca Powder
The Maca process begins with the selection of the seeds that are sowed and cultivated. After being inspected to comply with regulations, Maca roots are harvested approximately 8 months after cultivation. The roots are then dried naturally using sunlight and transferred to the plant for processing. Inside the plant the Maca roots are washed, disinfected and broken into chunks. Next, the roots run through the gelatinization process (cold process). When the roots are completely dry, they are ready for packaging
